About the Recipe
Traditional deviled eggs get a easy makeover with a filling piped in to look like pumpkins.

Ingredients
8 hard boiled eggs
¼ cup mayonnaise
1 tablespoon chopped green onions
1-2 teaspoons dijon mustard
⅛ teaspoon salt
¼ teaspoon paprika
red food coloring
yellow food coloring
fresh chives
Preparation
Peel the hard boiled eggs and cut them in half lengthwise. Scoop out the yolks and place them in a bowl. Set egg whites aside.
In another small bowl, combine mayonnaise, onions, dijon mustard, paprika and salt. Stir in 2 drops of red food coloring and 1 drop of yellow food coloring.
Add the mayonnaise mixture to the egg yolks. Mix well until the yolk mixture is smooth, creamy and a consistent orange color.
Place the yolk mixture into a disposable piping bag fitted with a large star tip. Pipe the filling into the hollow of the egg halves. Add a chive to the top of each egg for the pumpkin stem.
Display the eggs on a serving platter.
