Ingredients
1/2 pound Stoysich Hickory Smoked Bacon, diced
1 small onion, chopped
1/3 cup green pepper, chopped
2 stalks of celery, chopped
3 garlic cloves, minced
1 cup unsweetened pineapple juice
8 Lime wedges
3/4 cup ketchup
1 Pound Stoysich Old Fashioned Wieners, cut into bite-sized pieces
Pineapple chunks or tidbits, drained, optional
Optional: Cooked rice or noodles, for serving
Preparation
Step 1
In a medium saucepan, cook the bacon until crisp. Remove the bacon and drain it on paper towels; set aside. Drain the bacon grease, reserving 1 tablespoon of the drippings.
Step 2
Saute the onion, celery, green pepper, and garlic in the remaining bacon drippings until tender.
Add pineapple juice, ketchup, and chili powder; mix well. Bring the mixture to a low boil.
Step 3
Cut Hot Dogs into Appetizer Size Pieces. Add the hot dogs and return to a boil. Reduce heat and cover; simmer for 8-10 minutes or until the hot dogs are heated through.
Stir in the pineapple, if desired, and cook another 3-5 minutes or until the pineapple is heated through.
Mix in the reserved bacon.
Step 4
Transfer mixture to a small crockpot or chaffing dish. Offer guests a small bowl - with a lime wedge - can be enjoyed as is or dished over rice.
