Spicy Pineapple Slaw
About the Recipe
This refreshing, picnic-perfect pineapple slaw to accompany grilled meats, sandwiches, and tortilla chips.
4 cups shredded green cabbage (from 1 head)
2 cups diced fresh pineapple
1 cup shredded red cabbage
1 cup radishes, thinly sliced
1/2 cup loosely packed cilantro leaves
2 tablespoons minced jalapeño chile
1 red Fresno chile, very thinly sliced
1 teaspoon lime zest plus 2 tablespoons fresh juice (from 2 limes)
1 tablespoon fresh lemon juice
1 teaspoon honey
1/2 teaspoon table salt
1/4 teaspoon black pepper
1/3 cup extra-virgin olive oil
Combine slaw ingredients:
Toss together green cabbage, pineapple, red cabbage, radishes, cilantro, jalapeño, and Fresno chile in a large bowl.
Make slaw dressing:
Whisk together zest, lime juice, lemon juice, honey, salt, and pepper in a small bowl. Add oil in a slow steady stream, whisking constantly until smooth.
Combine slaw and dressing:
