About the Recipe

This refreshing, picnic-perfect pineapple slaw to accompany grilled meats, sandwiches, and tortilla chips.

Ingredients

  • 4 cups shredded green cabbage (from 1 head)

  • 2 cups diced fresh pineapple

  • 1 cup shredded red cabbage

  • 1 cup radishes, thinly sliced

  • 1/2 cup loosely packed cilantro leaves

  • 2 tablespoons minced jalapeño chile

  • 1 red Fresno chile, very thinly sliced

  • 1 teaspoon lime zest plus 2 tablespoons fresh juice (from 2 limes)

  • 1 tablespoon fresh lemon juice

  • 1 teaspoon honey

  • 1/2 teaspoon table salt

  • 1/4 teaspoon black pepper

  • 1/3 cup extra-virgin olive oil

Preparation

  1. Combine slaw ingredients:

  2. Toss together green cabbage, pineapple, red cabbage, radishes, cilantro, jalapeño, and Fresno chile in a large bowl.

  3. Make slaw dressing:

    1. Whisk together zest, lime juice, lemon juice, honey, salt, and pepper in a small bowl. Add oil in a slow steady stream, whisking constantly until smooth.
